Tilapia is often referred to as “St. Peters’ fish” since it is widely believed to be the fish Jesus fed to a congregation of more than five thousand. Tilapia is mild and sweet tasting, even somewhat bland. It easily acquires flavor during preparation lending itself to the use of sauces and seasonings. It is great for retail and foodservice. |
| Tilapia fillets are available shallow skinned and deep skinned, graded as 2-3, 3-5, 5-7, 7-9 and 9oz up. Gutted and scaled tilapias are graded as 300-500, 500-800, and 800g up. Farm raised • Naturally low in fat • Excellent source of protein • Izumi Dai (Sashimi quality) |
