John dory is a delicate white fish that has a sweet, unique flavor. Some would say it even tastes like butter because it melts in your mouth. The moniker “St. Peter’s fish” comes from the biblical tale about the apostle Peter catching a fish that carried a shekel coin in its mouth. Each side has a special “thumb print” of St. Peter on its skin.

John dory is usually available as fillets skin-on or skinless.
