Haddock is a close relative of cod. Haddock has a mild, sweet flavor. It is lean and slightly firm with a delicate flake.

Haddock usually are available as fillets or portions. Fillet blocks are used as an ingredient of breaded and battered portions and entrees. Molded fish (fish shape or stick) and other unglazed haddock fillets/tail fillets/portions/loins are ideal for further breading.
